Ossau-Iraty, which has had the PDO seal since 1980, can only be produced from milk of the Manech and Basc-Bearnaise ewe and needs to ripen for at least 90 days. Ossau Iraty is creamy and buttery in the mouth with flavors of nuts, fruits and herbs.
