From Greensboro, VT comes this pasteurized cows’ milk cheese that takes its name from Greensboro’s local librarian. Harbison is a bark-wrapped bloomy‐rind cheese that balances a sweet, nutty flavor along side complex herbal and woodsy note from the cambium cut from the spruce trees at JasperHill Farm. The paste is spoonable but not runny, and represents a marked flavor and textural contrast to the expertly developed rind. The variety of flavors here represents the quality of the milk alongside the unique expression of terroir from the bark.
Enjoy with Sparkluing Wine, Apple Cider and or a rich IPA.
Freshly baked crusty bread, the bark around the cheese gives a ready-‐made serving option: present the cheese as an deal centerpiece to a spread of artisan cheeses.
